Folicello Rosso Lambrusco, rustic, old school and wonderful

A rustic, dry Lambrusco with a mix of the grape's signature fruity-floral and earthy funk. Refermentation is done in bottle, the old fashioned col fondo way, and left unfiltered. Grapes are organic and yeasts are all indigenous. This bottling is entirely comprised on the Lambrusco Grasparossa di Castelvetro variety.
Farming is entirely organic, no artificial fertilizers or sprays. Fermented with native yeasts to dryness, yet still bearing the aromatic levity of the varietal. This is bottle conditioned Lambrusco. Despite being traditional this is now a rarity as most Lambrusco is made with the bulk charmat method, a technique of fermenting in a tank that has been widely adopted as more economical. This fermentation in the bottle really add the the texture and complexity of the wine (think of Champagne versus Prosecco). The bottles are disgorged to remove the large sediment but not filtered or fined and without additives. - Tristen Gild
